Pan-fried Glutinous Rice with Eight Treasures

Ingredients :

300g   glutinous rice

150g   red bean puree

2 tbsps   pine nut

2   dried apricot

2 tbsps   raisins

2 tbsps   dried longan pulp


 

1 tbsp   osmanthus sugar

1 tsp    lard

little   osmanthus sugar(dipping)


 


 


Directions:

1.Rinse the glutinous rice and soak in the water for 4 hours.

2.Press the red bean puree, chop the apricots and rinse all together with raisins and longan pulp by hot water. Set aside.

3.Drain glutinous rice and put it in a shallow bowl and steam by high heat for 30 minutes. Remove and fold in lard, osmanthus sugar, pine nut and mixed fruit whilst hot.

4.Divide the glutinous rice into two portions. Place one portion over a shallow pot covered with glide cline and put red bean puree on top. Again place balance glutinous rice on top and cover by glide cline. Press to form cake shape. Set aside.

5.Treasures rice can be steamed or pan-fried until both sides turning golden. Chop the cake into pieces and serve with osmanthus sugar which enhances the flavour.
